I will start immediately: on the first day, I will gather available public records and recreate the zone before switching the NS in GoDaddy. Then I will safely switch the NS, check the website, email, and services, set up and confirm Google Workspace, MX, SPF, DKIM, and DMARC if needed. I have experience with DNS, Cloudflare, and email records. Are there any non-standard subdomains or third-party services that are not visible from the public DNS?

Familiar situation: an old zone in Cloudflare without access, and the domain is linked to it through nameservers guss/nelci. It's important not to rush the switch, as last time, but to first get the full picture.
I will gather all current A, AAAA, CNAME, MX, TXT (including SPF) records through external DNS tools and analyze the website and email, recreating them exactly in the new Cloudflare zone, and only after verification will I switch the nameservers in GoDaddy to teresa/wells. Then I will set up TXT verification, MX, SPF, DKIM, and DMARC for Google Workspace, so the domain is confirmed without downtime for the website and email.

Giving the domain a new life and regaining full control is entirely feasible and safe for the site. The reason the site went down last time was that the new Cloudflare simply did not have the correct Origin IP (your server's address) and additional records set up.
Here’s how we will do it:
We will gather all records: Using reconnaissance DNS tools (dig, IP history, certificate analysis), we will find the real IP address of your server and all existing CNAME/MX records.
We will prepare the new Cloudflare: We will input all the found records and also immediately add verification and MX/SPF/DKIM/DMARC for Google Workspace.
We will switch NS in GoDaddy: After ensuring that the new configuration is 100% filled out, we will switch the NS servers. The site will continue to operate without interruptions.
We will check Google Workspace: We will complete the verification and test sending/receiving emails.

Transferring DNS: I am removing the current A/AAAA/CNAME/MX/TXT/SRV records using dig and services like Cloudflare API/whatsmydns to get a complete picture of the active zone, without relying on access to the old account.
I recreate the zone in the new Cloudflare 1 to 1, check the resolving before changing the NS, and only then switch the nameservers in GoDaddy. I will separately configure TXT/CNAME/MX/SPF/DKIM/DMARC for Google Workspace verification.
