I have extensive experience working with microcontrollers and their modules. I have created systems of varying complexity using Arduino Uno, Arduino Leonardo, ATmega16, ATmega328P-PU, ESP32S3, ESP32P4, LilyGO T-Call SIM800H, and have developed appropriate connection schematics for various modules (RTC, LCD, SD card module, MAX485) with different connection interfaces (SPI, I2C, UART), taking into account the voltage on the module pins, ease of further connection, and compactness.

In your project, giant and functionally limited Arduino boards are not needed. Instead, it is better to use the compact and inexpensive ESP32C3 Supermini, to which all sensors can be connected. It can be powered via USB-C or from a 5V DC power bank, power supply, etc. This microcontroller also has a built-in Wi-Fi/BLE module: it can be set up so that the ESP32C3 creates a Wi-Fi access point, and when users connect to it, they can access a website in their browser to control the microcontroller itself (thus, the microcontroller can be managed from any device that has an internet connection).
