Зачем выбирать самые забытые CMS
Можно качественно сделать на WP или ОС ( смотря сколько у вас товаров )новые технологии и куча уже готовых решений ,начина от способов доставок, оплата до интеграций с системами учета -
Я не против. Просто хочу самое простое решение. Товаров - минимум - сейчас 3 (три!), будет 10.
Плюс скорость загрузки и СЕО у файлов выше, чем у динамики на обычных CMS/
Хотя - можете предложить свои варианты, если можете реализовать конструктор страниц

есть возможность сделать на вордпресс с помощью acf pro, но могу и просто файлами. если нужна корзина товаров тоже сделаю с помощью js, всё довольно быстро грузится.
сама верстка блочная, поэтому можно менять и редактировать и вручную через редактор.
поэтому хотелось бы увидеть все макеты, чтобы предложить оптимальный вариант по реализации.

Откровенно говоря, сейчас на старом сайте я использую textolite для редактирования... То есть, на сервере копирую странице, а в редакторе руками переставляю то, что мне нужно, меняю фото, тексты и т.д.
Но это, разумеется неудобно, т.к. когда требуется поменять что то в шапке или футере, то начинаются танцы с бубном
