Ingredients
2 beef steaks (ribeye or sirloin, 1–1.25 inch thick)
2 tablespoons olive oil
3 cloves garlic, minced
2 tablespoons unsalted butter
1 teaspoon fresh rosemary, finely chopped
1 teaspoon fresh thyme, finely chopped
Salt and freshly ground black pepper
Optional: crushed red pepper flakes
Instructions
Remove steaks from the refrigerator 30 minutes before cooking and pat dry with paper towels.
Season both sides generously with salt and black pepper.
Heat a heavy skillet (cast iron preferred) over high heat and add olive oil.
Sear steaks for 3–4 minutes per side until a visible crust forms.
Lower heat to medium, add butter, garlic, rosemary, and thyme to the pan.
Spoon the melted herb butter over the steaks for 1–2 minutes.
Remove from heat and let rest for 5 minutes before serving.
