Ибо база данных магазина классическая реляционная модель со структурированными связями с уникалтными ключами со вторичными ключами с соединениями таблиц(погуглите как непросто сделать соединение нескольких таблиц в Mongo)
No SQL (Mongo) предназначены для хранения слабо структурированных данных (Как минимум задумывались)-с плохо структурированным контекстом Хотя я видел как натягивали "сову на глобус" и использовали в nosql в реляционной модели и-Жили и мучались пока не перенесли все в соответствующую СУБД

Так как это зависит от бизнес процесса и количества объектов данных.
К примеру есть 10млн клиентов, каждый делает ТО 2 раза в год, на одно ТО 5-10 работ + можно добавить истолнителей, разные сервисы и адреса, оценки и коментарии. И все это работает уже лет 5 например. Некоторые таблицы разрастутся до сотен милионов записей. И теперь предствавим что нужна карточка истории обслуживания авто. Джойнить десяток таблиц на сотни милионов строк? или вытянуть документ по ИД? -
