Щодо гугл-таблиць, після заповнення гугл-форми - автоматично генерується таблиця з відповідями. Першим стовпцем буде відповідь до першого питання.
Після того, коли людина дасть відповідь, можна буде цю таблицю змнювати під свої потреби (скриптами и вручну).
Щодо номеру відповіді - Sheets API такої можливості не надає. Але там є мітка часу кожної людини, яка дала відповідь і по тій мітці можна буде згенерувати номер, або інший варіант - прописати скрипт з тригером на нову відповідь.
