Main Requirements
1. Structure of the Sheet
1. Summary Sheet (Dashboard):

• Breakdown of income and expenses by categories (with visual charts/graphs).

I suggest doing it a little differently. Use Google Sheets as a Database, and create a convenient dashboard in Looker Studio with all the metrics you need. But if not, everything can also be done in Google Sheets.
I don't know what datasets you have, but if there are advertising expenses, then using https://www.windsor.ai/?fpr=vd it will be possible to set up automatic exports for expenses and other indicators from Google Ads and Facebook Ads accounts.
