1. Зачем для такой простой АПИ использовать для этого плагин? Темболее что текущая версия ВП уже с коробки поддерживает RestFULL API? Вы хотите что б сейчас поправили сам плагин, а как он будет обновляться? Для таких задач нужно использовать свои АПИ, которые спокойно можно будет уже править и корректировать не зависимо от "темы" или "обновлений"! А по вашей проблемме с "more" - посмотрите сам контент записи через админ панельку, которую выводит этот непонятный АПИ.

2. Спецсимволы.. если вы про "обратные" ковычки, которые использует ВП при выводе после применения wp_filter post_content то это нормальная для него ситуация (в базе данных хранится обычная "односторонняя ковычка") , отключается так же убиранием надвязки одного фильтра, а то что вы видите в "отвтете" циферки - это кодировка JSON т.к. русский оно не поддерживает, и перекодируется соответственно u(unicode)0**** номер символа

3. И опять же сталкиваемся с тем, что нужно иметь СВОЮ АПИ, а не использовать кем-то написанный плагин с ограниченными возможнсотями...

И тут извольте, но не 200 грн бюджет...
