просто там еще настройки самого сервера или домена могут поменять в админке, я этого боюсь не только кода, но в принципе как вариант, можем через приватный гит сделать но клонирование проекта себе тоже не хочу разрешать.

Налаштування не зберігають в git. Паролі тощо. Зазвичай це є недоступним для програміста. Програміст лише знає як називається константа або назва конфігураційної змінної, що приходить з environments.

Думаю, що один з варіантів, це робота у віртуальному робочому середовищі. Але я не знаю хто так зараз працює.

Бюджет в принципе неадекватный для такого к-ва правок. Неизвестно что там и как работает, а вопрос с почтой вообще крайне абстрактный и требует много времени и проверок чтобы выяснить причину проблемы.
На тему тимвьювера - это конечно не стандартный подход, но в принципе терпимый. -
Там все работает очень просто. Бюджет адекватный для пары часов мастера который сидит без дела.

Я думаю - вы немного заблуждаетесь в стоимости часа мастера который может порешать все эти вопросы за пару часов, еще и под тимвьювером.
