Hello! I have experience working with OpenCart and Facebook Graph API. I have reviewed the description of the problem. Most likely, the error of disappearing Instagram accounts and messages is related to an API update or incorrect handling of the server response (JSON).

How I will fix this:

Direct: I will check the logic of receiving messages (Webhooks or Cron) and whether the permissions (instagram_manage_messages) in the token are sufficient.
Account list: I will debug the request for retrieving pages. Often, the Instagram account "drops" if it is not linked as instagram_business_account in the API response.
Counter: I will find the code in header.php (or menu controller) and correct the counting logic so that the number is global and does not disappear.
