Не понимаю зачем Вам текстовый файл. Я бы предложил бы журнал хотя бы в sqlite3 или csv (лучше бы MySQL или PostgreSQL) и уж если совсем надо по итогу в raw text. Опять же не до конца понятно, что Вам конкретно нужно если это коллтрекинг, то этого может в упрощенном виде хватить на первое время, но если речь идет об синхронизации, генерации исходящих звонков с Вашей CRM, то лучше сразу использовать пусть простой но framework (Kohana, Yii, etc).
