Jabber это протокол обмена текстовыми сообщениями, а не потоковым аудио
Их (Asterisk и Jabber) можно связать лишь в виде уведомлений
То есть при входящем звонке с/на важный номер астериск может отправлять сообщение
Или при пропущенном звонке, как пожелаете
Но звонить используя XMPP у вас не получится
