Можно сделать мультивалютность магазина. В плоскости всей сессии покупателя. Так же и для админки. Такое подходит?

Достаточно только для покупателя. Смысл же не в этом, а чтобы платежка приняла заказ в своей валюте и покупателя при этом не озадачило то, что при расчете сумма выставляется не в Евро, а в Злотых

тут плохо сделано. в категории в баксах, в карточке товара в грн. в корзине опять в баксах.
тут надо сделать так: везде выводить грн, а под ценой маленькими буквами в долларах для ориентирования клиента. весь расчет то в гривнах.

У нас расчет будет в Злотых, но покупателя это не должно пугать, так как он привык к Евро. Потому БОЛЬШИМИ буквами как раз лучше ЕВРО вывести, а вот злотые уже маленькими рядом.
