Видим устройство контроля как конечный автомат, т.е. автономное устройство, например на STM32, а панель управления - лучше найти совместимую с возможностью доработки. Не исключаем, что панель придётся разрабатывать на опенсорсном железе (типа raspberry pi pico + lcd display от waveshare). В любом случае, напишите в ЛС, обсудим детали проекта.
