My last project, a fitness tracker for Android OS, was written using the Flutter framework and uses a BLE sensor to monitor the user's physical activity.
To connect the Bluetooth sensor, I used the flutter_blue_plus plugin.
The application runs a service that receives data from the sensor (accelerometer and gyroscope readings) and does not allow the application to be closed when it is not active.
I started the Android service through the platform channel, using MethodChannel.
The code for the application that starts the service is written in Kotlin. Flexible notification settings were important for my project, so I did not use third-party plugins.

Последний мой проект, фитнес трекер для ОС Андроид, написан на фреймворке Flutter и использует BLE датчик для мониторинга физической активности пользователя.
Для подключения блютуз датчика я использовал плагин flutter_blue_plus.
Приложение запускает службу, которая получает данные от датчика (показания акселерометра и гироскопа) и не позволяет закрыть приложение, когда оно не активно.
Службу Андроид я запускал через канал платформы, используя MethodChannel.
Код приложения, запускающий службу, написан на Kotlin. Для моего проекта была важна гибкая настройка уведомлений, поэтому я не использовал сторонние плагины.
Мой опыт отлично подходит для решения вашей задачи и я с удовольствием возьмусь за проект.
