1) Elementor is "heavy," it will significantly slow down the site + a pro version is needed for proper functioning.

2) Elementor will not allow full customization of WooCommerce pages, so you will still have to work with the template.

There are 2 ways to create an online store on WordPress.
1) Purchase a professional template and then customize it.
2) Order design, then layout, then integration and setup.

Option 1 is faster, cheaper, but not as flexible and the quality is not as good as option 2.
Option 2 is better in terms of the quality of the final product, but significantly more expensive and takes longer.
