The format 210×210 is familiar to me; it feels great in hand, but it requires attention to the margins so that the text does not "go" into the spine when sewn with thread. Offset 100 g is also the right choice; the book will feel pleasant to the touch and will not be see-through.
I have experience in preparing layouts specifically for offset printing and hardcover. I will do everything cleanly, without technical errors that usually arise in printing.
