За проведённое время в фрилансинге я знаю многие правила, одно из них : нельзя браться за несколько проектов.Наверное сам придумал.

Вполне нормальное наблюдение. За двумя зайцами... и т.д. Народное правило.

С таким правилом вы никогда не заработаете. Это 100%.
У меня обычно в среднем 3-5 проектов в работе. -
От сложности проектов зависит. Я бы тоже взялся за парочку сразу. Но, бляха, ни одного не получается выхватить. Хоть нанимайся в субфрилансеры.

От многих факторов зависит, срочность проекта, его стоимость и сложность.

Гугл акулу не нашел, вполне может и своя.
Моя дочка (11 лет) рисует обалденно, только развиваться не хочет. Удивляться тут нечего. Новое поколение.

Для иллюстрации, акула нарисована вполне приемлемо, ну а если рассматривать, как рисунок в целом, то все очень посредственно.
