n8n workflow IMAP Trigger (every 5–15 minutes) → filter "new only" → normalization/cleaning → AI Extract (JSON schema) → record in Postgres → log/alert in case of error.

Postgres: tables emails, extracted_fields, processing_log (with message_id as unique).

Minimum web interface: list of emails, details, extracted fields, filters/search, login page + (admin).
