Здравствуйте. Раньше была 1 версия, и там распознавался просто код или фотография - там можно было использовать специальные системы, сам их использовал для распознования. Сейчас после установки этой системы защита очень очень сильная. Теоретическая возможность распознования есть но она практически нереальная. Сама каптча работает следующим образом.

Гугл генерирует специальный код для вашей формы а на самой странице с формой отображает каптчу
И после отправки формы Вы запрашиваете по тому коду что гугл сгенерировал в форме на гугл (тоесть все через сервер) и вовзращает гугл результат прошел человек индетификацию или нет.
