Если Вы не понимаете ничего, а создав такой проект понятно что не понимаете. То элементарно сделав одно движение, совсем не понятное для Вас, будет залит шел, бекдор или открыт доступ по ссш. И будете Вы смотреть в это черное окошко или нет, роли вообще не играет.

И к тому же кто сказал что Ваши сайты пойдут на 7.2? Потому что половина программистов еще не знают что есть пхп выше 5.6, а второй половине никто не заплатил чтоб они переделали свой код на 7.2. Про докеры и паралельный деплой я вообще молчу в вашем варианте. По этому обновляем, пробуем все упало, крики, паника, откатываем, в этоге полдня цирка. За эту цену? По этому "я лучше доплачу" эта фраза тут не уместна)
