Проблема тут одна ESP32)
надо делать такие вещи на нормальных микроконтроллерах с аппаратной поддержкой CAN шины.
Есп32 это все на программном уровне.
Во вторых надо смотреть плату, проблемы могут быть с электронной частью.
Код для приема сообщений и включения реле не занимает много места, и не требует каких либо библиотек.
Даже если это ESP32 то точно не стоит это делать через библиотеки Ардуино.
Как обычно люди хотят по быстрому , в итоге получают геморрой на месяцы..)))

Если у Вас серьезный проэкт с web интерфейсом и Can шиной.
То можно применить платы типа NanoPiNeo и т.п. + mcp2515 (Linux содержит нормальные драйверы).
Если не очень - то ваших описанных проблемах содержится ответы:
зависает web - итог пропускает кадры can (потому что кан тут программный), итог не включенные реле.

Посмотрел Ваши заказы раньше , я так понимаю - наверно вам собрали Эл. шкаф, а esp32 внутри?))
Тогда там может быть клубок проблем esd и т.п.
Вам стоит более развернуто расписать проблему.
