With this volume of data, I would recommend considering a web dashboard instead of Google Sheets. Initially, it may cost a bit more, but in the long run, the solution will be significantly more convenient and scalable.
Advantages of the web version:

Data is stored in a database rather than in a spreadsheet, so the system operates more stably as the volume of information increases.

Google Sheets is great for MVP or small businesses. But if you plan to develop e-commerce and increase the number of sales channels, a web solution will quickly pay off due to better automation, fewer errors, and the ability to further develop without the limitations typical of spreadsheets.
