"...Так чтобы база и товары не были задействованы.." - это как? Допустим мы бекап создали сегодня, прошел к примеру месяц, у вас добавились товары в течении месяца, и что-то пошло не так. Откатывая предыдущий бекап - вы откатите в том числе и базу, так как все данные что есть в wp - лежат в базе. Если же вы рассматриваете вариант бекапа только исходников - так это гплохой вариант, проще поднять гит и откатывать изменения, чем грузить хост работой с архивами просто ради того чтобы откатить изменения в коде
