You can't buy any quantity of goods. Different quantities in different categories.
We sell boxes, different boxes.
Category A goods - it must contain 10 units. There may be different products of category A, or one product of 10 units. Category A
For category B, 12 goods and can only be increased multiples of 12, 24, 36 etc.
(This could be 1 item multiples 12, 24, 36 units) or different products of category B in multiple but total 12, 24, 36 units)
So products can be different in one category, but only a certain amount can be ordered in a basket.
In the basket, check categories - if less or more - some kind of mistake.

При редактировании категории появится еще одно поле для указания минимального количества товаров и потом в корзине будет проверяться их количество.

Так можно ввести ограничение на товары, типо "кратно минимальному количеству" . Чтобы и в карточке товара сразу можно было выбирать товар кратно минимальному а не только в корзине. Просто указать всем товарам из каждой категории любое ваше количество. Это единственный правильный метод, если мудрить это через корзину на прямую, то потом нахватаетесь проблем
