Having reviewed your specifications, I believe I can implement a Shopify theme for you, based on modifying the existing theme, the same Dawn. We can also achieve this by creating a theme from scratch, but in terms of time, it will be almost the same; however, it is always better to start from scratch because this way we can avoid wasting time on the functionality of the old theme (removing old layouts, old code, and styles). However, the designer will be able to adapt to what is in Dawn, and I will be able to do the redesign.

Editing blocks and content works in such a way that the developer first defines the content editing layout in the code, connects this functionality, and then after developing the section, you can edit it in the customizer, if it is not sections that already exist in the theme. You will be able to move blocks around within the section, change colors, fonts if necessary - all of this exists in the theme settings by default.

Do we need a full UI design from us: yes, we need at least the Homepage, Product Page, Collection Page (with filters, pagination, collection banner, etc.), cart page or cart drawer, search (predictive and search page), blog, blog post (if there will be one), contact form, 404, header (we need to think about what should be there, it will be standard or with a mega-menu). For this, I can provide my designer who will professionally carry out this work.

Proposal for implementing logic (almost everything will be built using third-party apps):
Purchases - standard purchase functionality in Shopify, subscriptions - Recharge:) It is the most popular and stable app for this functionality.
Bundles - can be done using the Shopify Bundles app
Reviews - judge.me app, for example

Usually, such stores are completed within a timeframe of 2 months. But everything can depend on how the client's functionality changes and the complexity of the design.
