Вы не написали, какой общий объем базы данных товаров. Если объем значительный, то произвести экспорт из среды WP не получится, по крайней мере, не получится сделать все за одну операцию. (Кроме того, уточните, пожалуйста, какие именно данные товара нужны, например, нужны ли атрибуты.)
Поэтому, для корректного решения задачи нужно делать stand-alone скрипт, т.е. этот скрипт должен работать вне среды WP/WC.
Если скрипт работает в среде WP, то все даные товара извлечь очень легко - есть соответствующий стандартный функционал. Однако же, в случае со stand-alone скриптом ситуация сложнее.
К преимуществам эксплуатации stand-alone скрипта следует также отнести возможноть его запуска по cron.
