Так много всего написали, а главного нет. Какой Медиа-сервер используете?
Один, даже самый крутой сервер это не потянет. Для авто-конвертации нужен транскодер, на отдельном сервере. Для стрима самое важное это ширина канала. Поэтому, если порт 1000 мб/c, то для хорошего качества делите на 2,5, для HD - на 5, отсюда и узнаете сколько серверов Вам нужно.
И еще. Зачем такие напряги, хранить, конвертировать, балансировщик, сервера? Если просто фильмы даете, купите один сервер, базу фильмов и гоняйте сколько душе угодно.

Я не писал их, чтоб не ориентировались на них и предлагали свои варианты, которые подойдут под те требования.
Выходит что не обязательно хороший проц и много оперативы, главное ширина канала? И одним сервером решить не выйдет?
К сожалению база фильмов не подойдет так как субтитры делаються под определенные рипы и не факт что они совпадут с теми которые в этой базе.

Я пробовал настраивать HLS, что-то выходило, но понял, что лучше этим заняться профессионалу.
