Багато чого ще залежить від кількості позицій на ВП, при великих кількостях залежностями які має в бд ВП. Дуже сильно просідає.

Потенційно Wordpress зможе тримати таке навантаження, але, як уже вам писали - проблеми можуть початись з боку Бази даних.
Тестування серверу з порожнім магазину немає сенсу, це нерелевантні дані, і за ними не можна нічого оцінювати.
Якщо ви вже обрали Woocommerce як платформу, то потрібно зробити демо на тому ж сервері, де буде хоститись сайт, з усіма товарами. І тестувати швидкість PING до серверу та кількість одночасних PING, а повноцінне тестування з переходами по сторінкам, що дозволить створити навантаження саме на БД, і покращити релевантність.
Я б наповнив магазин, створив пулл всіх посилань, і потім вже а сценарієм з глибиною 5-10 переходів запускав кожного бота, які будуть одночасно робити саме переходи по сторінкам, а не просто робити одиночні запити на сервер. -
