Если доставка своя и ограничена регионом, то зону доставки зададим в WooCommerce и будем проверять по zip коду. Стоимость доставки считать нужно или она входит в стоимость продукта?
По оплате. Чтобы работать с рекурентными платежами при подписках, лучше всего подключать PayPal и/или Stripe. Большинство других платёжных шлюзов не поддерживают рекурентные платежи.

Это описание для WooCommerce Payments. Относительно новая функция, их собственный платёжный шлюз. Не во всех странах поддерживается. Сейчас их уже 18. Полный список здесь: https://woocommerce.com/document/woocommerce-payments/compatibility/countries/ WooCommerce Payments - готовое решение, встроенное в ядро плагина. Для подписок лучше использовать специализированное решение (аддон). Есть несколько плагинов для реализации такой функциональности. Большая часть из них работает по схожему между собой принципу и позволяет только выбирать срок подписки. Для выбора дней недели нужно писать своё дополнение к плагину подписки. В любом случае, кастомные модули не слетают при обновлении wordpress или woocommerce , если написаны в соответствии с требованиями. Кастомный плагин работает сам по себе, на него обновления ядра и других плагинов не влияют (если речь не зайдёт о совместимости). Дописывание функциональности темы делаются в дочерней теме, что также исключает возможность чему-то слететь при обновлении родительской темы. Самое важное - не делать никаких изменений напрямую ни в ядре WordPress, ни в коде активных авторских плагинов, ни в файлах темы. И тогда всё будет ОК. А дописывать функциональность придётся. Нет готового на 100% решения. Есть только базовые, очень близкие по требованиям. Но конкретно дать возможность пользователям подписаться на определённые дни недели, в которые будет осуществляться доставка, такого нет. Нужно реализовать, основываясь на одном из плагинов подписок. На каком - нужно подобрать, чтобы максимально просто было добавить свои функции.
