То, как вы описываете структуру ссылок, и исходя из примеров, которые вы указали, вам нужны не совсем категории, вам нужно создать произвольный тип записи.
Это почти то же самое, что обычная запись, но у нее могут быть свои параметры, свои шаблоны и, соответственно, своя структура ссылок.
Примеры сайтмапов, которые вы указали, все сгенерированы плагином Yoast SEO. Одно из его преимуществ как раз и заключается в том, что он автоматически создает сайтмапы под типы записей.
