ESP32 может на два потока одновременно и веб-сервер держать отвечать и датчики обрабатывать
в 8266 же это будет все в рамках loop-цикла
то есть сильно долго обрабатываете данные - мало того что датчики не читаются, истеккла сессия обмена ключами и надо заново к вайфаю конектится
8266 это камень поделок 5-7 лет назад или же для чего то ооочень экономного, дешевого и не критичного -
Датчик может опрашиваться севером с максимальной частотой раз в 15 секунд. Это критично разве будет? И разве будет иметь значение какой модуль использовать, что-бы удерживать сессию обмена ключами бесконечно долго? Или она все равно истечет?

и так и там будет результат, но детали
по цене разбег не особый
а если это еще и просто пет-проект на единичную сборку то тем более на esp32 есть огромная куча готовых плат-модулей где уже все спаяно, только подключай да програмируй -
Я не спорю, там разница в пару долларов, мне важна стабильность wi-fi, работа с несколькими датчиками, JSON. Включил и забыл.

вы с тем модулем если не знакомы - для начала встрянете как его вообще подключить и прошить
потом - что делать если подключил неправильно и спалил порты
а затем - модуль постоянно перезагружается, не хватает ресурсов, что делать -
