I have read the specifications completely - the task is clear: to set up a fabric store on Astra + WooCommerce for the Norwegian market, without custom programming, so that it can be managed independently later.
I will answer your question right away: selling products by running meters in WooCommerce is implemented through the unit of measure settings in the plugin or through the quantity field with a step of 0.1. This is a standard solution, nothing complicated. The remaining fabric in meters is managed through the Stock quantity field in WooCommerce, simply specified in meters.
