Его можно просто обновить до актуальной версии ? к примеру 3й без потери позиций по гуглу, данных и так далее... что бы без потерять

Увы, с опенкарт так не пройдёт. По-сути, такое обновление означает заливку на новый движок. На практике примерно так, если не хотите провала в индексации: на нормальном хостинге (с возможностью моментального клонирования) на техническом домене, или на поддомене действующего, ставите новый. Наглухо закрываете от индексации. Внимание: 3.0.3.6 - не годится, ещё сырой, только ДО 3.0.3.... Со старого экспортруете весь контент, если надо - правите во внешнем файле, и импортируете на новый. Проверяете всё, прежде всего - тождественность "хвостов" всех URL. Если уверены, что всё идеально - старый клонируете на технический домен или поддомен (на всякий случай, а новый - клонируете на его место, на всё - не более 3 минут, и абсолютная корректность переносов. При этом все ссылки останутся прежними, контент и прочее - тоже, и провала быть не должно. На более примитивном хостинге ручная заливка нового может и в несколько минут уложиться, а может - и в день вылететь - как повезёт. Со всеми вытекающими.
