Speaking specifically about development on Odoo, our experience is as follows:

1. Writing cron jobs for various tasks: scheduled and more flexible sending of emails (with additional conditions, depending on many parameters).
2. Implementation of business processes (BP) through automated actions. Validation of fields, automatic pulling of fields from other models (for example, more detailed information from sales orders was pulled into leads/opportunities upon payment confirmation). 90% of such automations were done through Python code in automated actions depending on several models.
3. Development of custom modules. Some tasks are simpler, cheaper (for the client, of course), and better for saving the system's resources (to avoid any lag), done through module development (possible only for the version of Odoo that the client hosts on their server). For example, fields that need to be updated "on the fly" - in real-time: index fields that depend on real-time or GMT, dynamic color changes (kanban CRM), extending the standard view.
4. Extending the standard view of lead cards, orders, contacts, etc. (not through Odoo Studio). Adding/hiding fields, moving buttons or renaming them. This is a common practice for clients migrating to another system, so creating a friendly interface with a minimal threshold for adaptation is a must-have. It can be done through the Odoo interface in developer mode, but the better practice is to develop through custom modules (point 3).
5. Custom emails with a unique design. Development and adaptation of emails with dynamic elements (inserting the recipient's name, listing products, specific conditions for displaying blocks). This is done through the code editor in the Odoo interface (possibly in the cloud version). Also, checking against various anti-spam metrics and optimization if necessary.
