Да именно ардуино и используется тут.
работал с емкостными датчиками
лучше всего подойдет есп12 ,простая и дешовая
МЕШ сеть очень неустойчивая для микроконтролеров
могу посоветовать ESP NOW протокол,очень похоже ,и можно подобие меш сети сделать.Расбери зачем?сервер для управления и сбора данных?
может лучше MQTT протоколом и в телефоне или планшете

В ESP NOW придется самому делать маршрутизацию, этого по возможности хотелось бы избежать.
Расбери - сервер управляет всеми устройствами, также предоставляет внешнее web api.
MQTT - Нужно где-то брокера размещать. Если локально то нужен сервер. Если в internet то в случае перебоев с выходом в глобальную сеть система перестанет работать.
датчик аналоговый,на шину несколько подключить неполучится
да и потери по питанию будут большие
предлагаю есп12 + емкостной датчик+полевик(irfz44) мини устройства совместно с клапаном и собрать их в сеть

Тут 2 момента:
1) Устройства измерения и полива должны быть раздельны. В основном по причине физического расположения подводов полива и мест снятия показаний.
2) Можно ли применять контролер чтобы оцифровывать показания влажности и подключить его в общую шину?
какие растояния между устройствами?

Сейчас 5 метров +-, в дальнейшем хотелось бы покрыть расстояния 100 - 200 метров с использованием mesh или чего-то подобного
а возможно и получится на одной линии 32 датчика
если их сделать на таймерах типа 555 или с005и транзисторе
только настроить на разное время
тоесть подаем питание на линию и первые 5 сек 1 датчик,далее 5 сек 2датчик..и т.д.
потом снимаем питание и заново
